Located on the high slopes of the volcanic mountains near Lake Kivu in Rwanda is one of our favorite Fair Trade coffee cooperatives. Committed to environmental and social sustainability, their efforts not only assist local communities but produce a high quality coffee. After harvest, the farmers deposit their coffee cherries at washing stations.The beans are dry fermented for 12 hours and then placed underwater for 24 hours. Following this process is multiple washings of the fresh green coffee. Finally, the beans are dried in mechanical driers and then in raised beds for 2-3 weeks. The end result is a balanced creamy cup of coffee with caramel, brown sugar and apple flavor.
