Rose, Berry, Winey Fruit
Known as the “land of volcanoes,” El Salvador is a specialty coffee growing country. Farmers there produce some of the most famous varieties of coffee beans in the rich volcanic soil. From his small farm, Las Piedritas, Mario Aguilar grows Bourbon, Pacamara and Pacas coffee. The coffee is picked ripe and de-pulped the same day. Fermented twice, washed twice , then dried on beds and patios for 12-18 days. The process produces a cup that has winey fruit flavors with rose and berry and is sweet and smooth.
