ASMUCAFE is an organization of women farmers and landowners in El Tambo, Colombia. Their mission is to improve the lives of their families and communities through coffee farming. This coffee goes through a process called double fermentation. The cherries are left in the loading hoppers for 14 hours, de-pulped in the afternoon or evening hours, and then left in traditional fermentation tanks for 10 hours. From there, the beans are washed 3-4 times. Finally, they are dried in parabolic driers or in the sun 8-12 days. Their commitment to process is something they share with each other. Their commitment to quality, you’ll notice in every cup. Notes of sugar, lemon zest, grapefruit and berry flavors shine through.
